first post and stuffed chicken and rice

I enjoy cooking. I enjoy experimenting. My husband enjoys eating, however, does not always love my experimenting. I also have a really hard time remembering what it is he says he likes.... the man actually has opinions about things! Like... red apples, not fuji apples, and unripe pears instead of ripe. Strange. Anyways - I am starting this blog so that I can keep track of food and recipes he likes so that I can make them again and again and again! The most recent recipe that he said is top five (WOW) foods is one I put together with bits and pieces of randomness I found in my fridge. Honestly, most of the bits and pieces were actually in my fridge because my mom and aunt got too much food over the holidays and I got to go grocery shopping in their kitchens! I took.... 2 chicken breasts, and flattened them between plastic wrap til they were like chicken-y pancakes meanwhile, I cooked exactly 2 pieces of bacon until they were extra extra crispy I poured out most of the bacon fat, and used the same little pan to saute about a cup of spinach and about 6 pieces of sundried tomatoes (dry, not in oil). At the last minute I added the bacon, crumbled up. I chopped about 1 oz of cheddar cheese into itty bitty pieces. Half the mixture went for each chicken breast, and I rolled the chicken up and baked in a cute little baking dish (that my friend Linda Wilson gave me years ago) for about 45 minutes at 350 degrees. I made basmati rice the old fashioned way... 1 cup rice, 3 cups water - boil til there are little holes in the top of the rice mush, then put a towel or papertowel across the top and put the lid on, and simmer for another 20-30 minutes. Add a tiny bit of butter and salt. Voila! Food my husband likes!
